This recipe goes for the Fantastical food fight challenge .This month challenge was Carrot cake..I have been hunting for a best carrot cake which should be easy to make and tasty .. Finally came across this recipe in one of my favourite YouTuber Bigger Bolder Baking What I liked about this recipe is there is no need for any creaming process, room temperature butter etc..when ever we decide to bake a cake and if it calls for butter then we should wait for the butter to come to room temperature the only thing which I don’t like … mostly I forget to keep the butter outside then again wait for the butter … but this recipe doesn’t call any butter this is a oil based cake recipe.Because of using the oil the cake is very light and fluffy.. so my best ever carrpt cake is going for this challenge…
As I got my best ever carrot cake recipe I would like to share with my viewers too… This is a must try recipe… Combination of carrots and cinnamon is mind blowing …The cake itself eaten is yum.. so if it’s had with the killer cream cheese frosting then I have no words to say… Though cream cheese frosting is slightly heavy and rich its one of the best frosting and goes well with carrot cake.. Even nuts goes well with the carrot cake so if you like nuts like pecans walnuts you can add to the batter..It can also be poured into cupcake moulds and baked to prepare cupcakes in that case it will take less time to bake..

- 1 1/3 cup All pupurpose flour
- 1 cup sugar
- 3/4 cup vegetable oil
- 2 eggs
- 200 gm carrots
- 1/2 tsp vanilla essence
- 1 1/2 tsp baking powder
- 1/2 tsp cinnamon
- 1(8oz) 225 cream cheese
- 2 cup powdered sugar
- 1/4 cup butter
- 1/2 tbsp vanilla essence

- Combine the dry ingredients -flour, Baking powder, cinnamon .
- Whisk together oil, sugar and eggs till thick (until well combined)
- Then slowly add in dry ingredients mix it well and finally add in grated carrots and combine well without any lumps.
- Add the batter to the greased pan and bake in pre heated oven @170°c for 45 -50 minutes until tooth pick inserted comes out clean...
- In a bowl cream together cream cheese and butter until smooth then slowly add in powdered sugar and vanilla and beat till creamy
- Chill it if needed then frost the cake ...

I have never had carrot cake with butter before, maybe because umma would always make with oil and that’s how I have grown up with! Totally love how your cake looks with the frosting, it is definitely on my agenda and I am thinking of making it for my birthday… hehe…
